Arcelia Gallardo brings authenticity and passion to her chocolate. A trained chef and chocolatier, Arcelia grew up on her family farm in Central California before heading to Berkeley for college. There she fell in love with the cuisine of Alice Waters and the chocolate of Scharffen Berger as it launched to become the first craft chocolate maker in the US. Arcelia currently lives in São Paulo, Brazil where she makes chocolate and works with cacao farmers to teach them to make chocolate from the bean, adding value at the farm level and helping the cacao farmers earn more income. The bars we offer here are made by Arcelia in São Paulo using cacao from Brazil and local inclusions such as Guava and Baruja Nuts.
