Founded by engineer and pastry chef Joshua Rosen, Charm School Chocolate gets its name from the "refining" Chef Josh uses to create chocolate from cacao beans, which he likens to the refining provided by charm schools. The logo for the company comes from Chef Josh's love of bowties - he has a large wardrobe of bowties, and you never know which one he'll be sporting when you see him at an event. Josh began his professional journey as a Carnegie Mellon-trained engineer before heading to the Culinary Institute of America to become a pastry chef. He has an impressive resume of professional pastry experiences, including time as a Sous Chef at Mario Batali's Del Posto, as well as winner of Sweet Genius on The Food Network. His extensive pastry experience and his attention to quality are apparent from the creamy, smooth and flavorful chocolates he creates. He relies on coconut milk to create milk and white chocolate that are vegan, even offering a limited-edition peanut butter toffee bar that is made with coconut milk.
