Founded in Popayan, Colombia by Carlos Velasco and his business partner Mayumi Ogata, Cacao Hunters works with local farm communities to identify and preserve native cacao varietals which are then stored in genetic collections. Each varietal of cacao is tested to determine how to best ferment and dry it to develop the flavors and aromas that are unique to the source. Not only is this delicious cacao, the chocolate is fantastic. Each bar offers unique terroir and excellent texture. The chocolate is made in Colombia, keeping all of the profits in the country of origin. It's good for the cacao farmers, it's good for Colombia and it's especially good for the chocophile!
