Founder Hallot (Hal) Parsons began making chocolate from the bean after a trip to Costa Rica in 2005. Over the next few years he perfected his chocolate-making craft through much trial and error, waiting to sell his first bar until 2008. The creamy texture of Escazu chocolate and the complex flavors are testament to Hal's roots as a chef and to his focus on quality. Escazu works directly with cacao farmers in Costa Rica and Venezuela, developing personal relationships with growers that allow Escazu to maintain the quality and integrity of their chocolate.
