David and Leslie Senk make their artisan chocolate in small batches in their store in Milipitas, CA, sometimes roasting only 6 pounds at a time. They have a long roster of chocolates made with cacao from different origins, changing origins often as they find great cacao. For them, that's the fun of making craft chocolate. Their exacting standards for choosing well-fermented cacao beans results in chocolate with complex flavors, bringing out the unique notes of each origin. Truly a craft chocolate maker, a batch of chocolate may only yield 100 bars.
