Dandelion Chocolate is a fantastic west coast bean-to-bar chocolate factory that focuses on maximizing single-origin cocoa bean flavor profile with, no more than, two ingredients.
The Madagascar bar is a great place to start when determining whether Dandelion's bars fit your roasting and tempering preferences. The beans come from an estate with 80 year old cacao trees. The bold and punchy notes of fruit and acidity carry throughout the tasting experience for a delightful flavor roller coaster on your tongue.
While I highly recommend dropping into one of their San Francisco shops, or their stand at the NW Chocolate Festival, to experience the full variety of flavor profiles they mature in each single origin bar, the Madagascar is a reliable place to start.
