The best way to store chocolate is to keep it in a cool, dark place with temperatures between 60° and 70° and low humidity.
Never put chocolate in the refrigerator. The quick change in temperature and humidity will cause cocoa butter crystals to rise to the top of the chocolate, resulting in a hazy, light-colored "bloom" on the chocolate. Chocolate with bloom on it is still edible, but it is unsightly and has a less-desirable texture.
Chocolate picks up odors like a sponge, so storing chocolate next to an onion might result in onion-flavored chocolate. The best way to prevent this from happening is to keep chocolate stored in a Ziploc bag once it has been opened.
