There is a lot of excellent chocolate on the market, and there is a lot of poor-quality chocolate on the market. How do you recognize a good bar of chocolate?
Quality artisan chocolate is made with “flavor” cacao beans, not the bulk beans traded on the commodities market. The best quality beans are fermented and dried properly by the farmer before making their way to the chocolate maker. A skilled chocolate maker decides how to roast and conch the beans to bring out their best flavor. The easiest way to evaluate chocolate in the absence of this information is by reading the ingredients. Like other artisan foods, quality chocolate is made with minimal ingredients.
Ultimately, finding your favorite chocolate is a matter of personal taste. There is no right or wrong answer, it's based upon what you like, and what you like may evolve over time.
